Christmas Apple and Cinnamon Loaf recipe
This recipe is a must-try for your holiday season - the fruits, spice, and warmth of this cake can't be beat.
Ingredients:
- 2 ½ cups flour
- 1 cup of sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup butter, melted
- 1 egg, beaten
- ½ cup milk
- 1 teaspoon vanilla
- 1 cup peeled, chopped apples
- ½ cup raisins
- ½ cup chopped pecans (optional)
Directions:
1) Preheat oven to 350°F. Lightly grease a loaf pan.
2) Combine flour, sugar, cinnamon, baking soda, and salt in a large bowl; whisk well. Add butter, egg, milk, and vanilla; stir to mix. Fold in apples and raisins. Pour into prepared loaf pan and sprinkle top with pecans.
3) Bake 45 minutes, until a toothpick inserted in the middle comes out clean. Cool 10 minutes before removing from pan; cool completely on a wire rack.

I didn't add raisins or nuts to my recipe but to keep the crunchy texture I added an oatmeal crumble to the top and I used more apple. The batter was very thick which made it difficult to add the apple and I had to bake it at least 1/2 and hour longer then the given time before it was done (so definitely do a toothpick check). The taste was good but not spectacular. I will probably make it again with the crumble top but I will try a bit more milk (maybe even sour milk which goes great with cakes and muffins), I'll add a bit of nutmeg (which I find enhances cinnamon wonderfully) and I will probably shred the apple instead and maybe even add a bit more.
I made this recipe except I changed it to muffins and everyone in my house had doubles of how much they liked them! Thanks for the receipe!
I made it as a round cake, adding some nutmeg and powdered ginger to the cinnamon, and I mixed the nuts into the batter. The result was very impressive and the house smelled wonderful after I baked it!
